that-taco-stand-2There is a new food truck in town. It is right across from Bluebonnet Electric, next to the sno cone stand, on Murray Street.

It’s a family affair. Carlos says his dad built the food truck from the flat bed up. A beautiful shiny kitchen, he made the walls, ceilings, installed the plumbing, but they did have help with the electrical he says. Carlos has been cooking his whole life. Restaurants are a family business. His aunt has the Taco Stop in Elgin, another aunt owns the Azteca Taqueria also in Elgin. Carlos attended Le Cordon Bleu cooking school in Austin and now works for both the Cheesecake Factory and Maggiano’s in the Domain. He says he particularly enjoys his job at the Cheescake Factory because he gets to travel. “They send me all over the world to open up new stores”. He’s been to Dubai twice, Kuwait, Mexico City, Saudi Arabia, and most recently, the Barton Creek Mall. He is joined in the food truck daily by his father and brother.

When asked about the ingredients in the fabulous red salsa Carlos admitted he doesn’t know what is in it “my mom makes it”. The carne guisada is trimmed chunks of tender beef simmered to perfection in a well-seasoned velvety gravy. The al pastor is sweet and tangy made by dad “with two kinds on meat, a bunch of other stuff, and pineapple”. The barbacoa is delicious, tender, and juicy.

Carlos is excited to become active in the community, and looking forward to working with the schools. He was born in Taylor, raised in Elgin, and now calls Manor home. They are open from 6AM to 2PM Monday through Friday for now. They have been open for just a little over a week and the hours might change. Orders can called in, or texted, by dialing (512) 771-5167.
